Ingredients
The following ingredients have 4 Servings
- 1 tablespoon olive oil or 1/4 cup water
- 1 cup onion, finely diced
- 1 green bell pepper, finely diced (optional)
- 1 – 2 cloves garlic, minced or 1 teaspoon garlic powder
- 1 cup quinoa, rinsed
- 1 tablespoon tomato paste and/or 1 cup diced tomatoes (if using canned, drained)
- 2 cups low-sodium vegetable broth
- 1/2 teaspoon oregano
- 1/2 teaspoon EACH garlic + onion powder (for good measure, but optional)
- salt + pepper, to taste
- fresh chopped cilantro, to serve (optional)
