Ingredients

The following ingredients have 4 Servings
  • ⅔ cup raw quinoa (rinsed)
  • 1 cup+1tbsp milk (regular, almond or oat, adjust the amount to your taste)
  • 1 teaspoon vanilla extract
  • 1½ tablespoons maple syrup (or to taste)
  • ½ teaspoon cinnamon
  • 1 tablespoon mascarpone cheese
  • Pinch of fine sea salt

Instruction

  • Rinse and drain the quinoa and place in a small pot.  Add most of the milk and bring to the boil stirring often. Lower the heat and simmer for 10 minutes stirring frequently.
  • Add the vanilla, maple syrup, cinnamon, pinch of salt and the rest of the milk and continue simmering for 5-6 minutes until the pudding has thickened and the quinoa is fully cooked.  If you need to cook it a little longer add a splash of milk or water as the mixture will thicken further.
  • Remove from the heat, stir through the mascarpone and serve hot. Alternatively chill before serving.
