Ingredients

The following ingredients have 6 Servings
  • 2 Tbsp. cumin
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. paprika
  • 1 tsp. coriander
  • 1 Tbsp. chili powder
  • 1 tsp. garlic powder
  • 4 Tbsp. olive oil plus some
  • Salt and pepper to taste
  • 1 pound ground turkey
  • 1-2 head of romaine lettuce (chopped)
  • 3-4 to matoes (chopped)
  • 3/4 Queso Fresco (crumbled)
  • 1/4 c. fresh cilantro (chopped)
  • Salsa: 2 ripe mangoes (cubed)
  • 1/2 small red onion (finely chopped)
  • 1 jalapeño chile (finely minced)
  • 3 Tbsp fresh lime juice
  • 1 small avocado (cubed)
  • Salt and pepper to taste
  • 1 lime (juiced)
  • Other Suggested Toppings: Sour cream
  • Corn chili (Trader Joe’s – optional)
  • Tortilla or corn chips

Instruction

  • In a large pan, coat the bottom with oil and heat on medium-high. Next, add the ground turkey and spices. Cook until turkey is fully cooked—8-10 minutes. Set aside and keep warm.
  • In a medium bowl, combine mango, jalapeño, avocado, lime, onion, and salt and pepper to taste. Set aside.
  • Toss desired toppings—along with salsa and ground turkey, into a bowl and enjoy!
