Ingredients
The following ingredients have 6 Servings
- 2 Tbsp. cumin
- 1 1/2 tsp. cinnamon
- 1/2 tsp. paprika
- 1 tsp. coriander
- 1 Tbsp. chili powder
- 1 tsp. garlic powder
- 4 Tbsp. olive oil plus some
- Salt and pepper to taste
- 1 pound ground turkey
- 1-2 head of romaine lettuce (chopped)
- 3-4 to matoes (chopped)
- 3/4 Queso Fresco (crumbled)
- 1/4 c. fresh cilantro (chopped)
- Salsa: 2 ripe mangoes (cubed)
- 1/2 small red onion (finely chopped)
- 1 jalapeño chile (finely minced)
- 3 Tbsp fresh lime juice
- 1 small avocado (cubed)
- Salt and pepper to taste
- 1 lime (juiced)
- Other Suggested Toppings: Sour cream
- Corn chili (Trader Joe’s – optional)
- Tortilla or corn chips
Instruction
- In a large pan, coat the bottom with oil and heat on medium-high. Next, add the ground turkey and spices. Cook until turkey is fully cooked—8-10 minutes. Set aside and keep warm.
- In a medium bowl, combine mango, jalapeño, avocado, lime, onion, and salt and pepper to taste. Set aside.
- Toss desired toppings—along with salsa and ground turkey, into a bowl and enjoy!
