The following ingredients have 4 Servings
  • 2 small aubergines

  • a few sprigs of fresh coriander

  • 1 heaped tablespoon shelled pistachios

  • 650 g ripe mixed-colour tomatoes
  • 1 preserved lemon
  • 4 spring onions
  • ½ –1 fresh red chilli
