Ingredients

The following ingredients have 2 Servings
  • 4 Middle Eastern flatbreads
  • 1 block halloumi, sliced
  • 4-6 tbsp hummus
  • ½ cucumber, halved and thinly sliced
  • 2 tbsp harissa
  • 2 tbsp runny honey
  • 1 lemon, juiced
  • a handful flat-leaf parsley, finely chopped

Instruction

  • Warm the flatbreads in the oven. Whisk the dressing ingredients together. Grill or fry the halloumi until golden. Spread hummus over the flatbreads then top with halloumi, cucumber and a good drizzle of dressing. Roll up and eat.
