Ingredients

The following ingredients have 4 Servings
  • 1/2 cup coconut oil
  • 1/2 cup caster sugar
  • 1 egg
  • 1 tsp cinnamon
  • 3 tbs golden flax meal
  • 2 cups wholemeal self-raising flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup milk
  • 1/2 tsp vanilla extract
  • 1 1/2 cups fresh strawberries chopped
  • 1/4 cup choc chips *optional
  • 3 tsp caster sugar
  • 1/2 tsp cinnamon

Instruction

  • Preheat oven to 220C.
  • Whisk coconut oil and sugar together. Add egg and vanilla, mix well.
  • Mix in flaxmeal and cinnamon.
  • Sift flour, baking powder, and salt into a small bowl. With a wooden spoon fold flour mixture and milk with oil mixture until just combined. Don't over mix. Add milk gradually as it may not all be required.
  • Gently fold in whole blueberries or chopped strawberries. And choc chips.
  • Spoon batter into patty cups in a muffin tray. Combine sugar and cinnamon, sprinkle over muffins and begin baking at 220C. Reduce heat to 180C.
  • Bake for 20-25 minutes, or until an inserted skewer comes out clean.
  • Cool on rack.
