Ingredients
The following ingredients have 4 Servings
- 1/2 cup coconut oil
- 1/2 cup caster sugar
- 1 egg
- 1 tsp cinnamon
- 3 tbs golden flax meal
- 2 cups wholemeal self-raising flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/4 cup milk
- 1/2 tsp vanilla extract
- 1 1/2 cups fresh strawberries chopped
- 1/4 cup choc chips *optional
- 3 tsp caster sugar
- 1/2 tsp cinnamon
Instruction
- Preheat oven to 220C.
- Whisk coconut oil and sugar together. Add egg and vanilla, mix well.
- Mix in flaxmeal and cinnamon.
- Sift flour, baking powder, and salt into a small bowl. With a wooden spoon fold flour mixture and milk with oil mixture until just combined. Don't over mix. Add milk gradually as it may not all be required.
- Gently fold in whole blueberries or chopped strawberries. And choc chips.
- Spoon batter into patty cups in a muffin tray. Combine sugar and cinnamon, sprinkle over muffins and begin baking at 220C. Reduce heat to 180C.
- Bake for 20-25 minutes, or until an inserted skewer comes out clean.
- Cool on rack.
