The following ingredients have 22 Servings
- 2 lbs Stokes Purple Sweet Potatoes
- 2 TB Arrowroot Starch
- 1/4 Tsp Onion Powder
- 1/4 Tsp Garlic Powder
- 1/4 Tsp Black Pepper
Instruction
- Preheat the oven to 425°F.
- Peel and boil the potatoes for about 8-10 minutes, until just fork tender.
- Grate the potatoes to get about 3 cups of grated potato.
- Add the 3 cups of grated potato, arrowroot, and spices to a bowl and mix together.
- Take about 1 TB and form a tater tot shape, place on a Silpat or parchment paper lined baking sheet and repeat for the rest of the mixture.
- Bake in the over for 20 minutes, flip them and bake another 10 minutes.
