Ingredients

The following ingredients have 22 Servings
  • 2 lbs Stokes Purple Sweet Potatoes
  • 2 TB Arrowroot Starch
  • 1/4 Tsp Onion Powder
  • 1/4 Tsp Garlic Powder
  • 1/4 Tsp Black Pepper

Instruction

  • Preheat the oven to 425°F.
  • Peel and boil the potatoes for about 8-10 minutes, until just fork tender.
  • Grate the potatoes to get about 3 cups of grated potato.
  • Add the 3 cups of grated potato, arrowroot, and spices to a bowl and mix together.
  • Take about 1 TB and form a tater tot shape, place on a Silpat or parchment paper lined baking sheet and repeat for the rest of the mixture.
  • Bake in the over for 20 minutes, flip them and bake another 10 minutes.
