  • ½ cup (118ml) vegetable oil
  • 3 large eggs
  • 2 tablespoons (30ml) maple syrup
  • 2 teaspoons (10ml) vanilla extract
  • 1 cup pumpkin puree (not pumpkin pie filling)
  • 2 cups (280g) all-purpose flour, sifted
  • 2 teaspoons (5g) pumpkin pie spice
  • 2 teaspoons (5g) cinnamon
  • 1 ½ teaspoons (6g) baking powder
  • ¾ teaspoon baking soda
  • ¾ teaspoon salt
  • ¾ cup (177ml) milk (I use nonfat)
  • 4 ounces mascarpone cheese, cold
  • 1 cup heavy whipping cream, cold
  • ¼ cup powdered sugar
  • 3 heaping tablespoons of pumpkin
  • ½ teaspoon pumpkin pie spice
  • ¼ cup hot boiling water
  • 1 heaping teaspoon espresso powder
  • 1 tablespoons bourbon
  • 8 oz mascarpone cheese, cold
  • 1 1/2 cup heavy whipping cream, cold
  • ½ cup powdered sugar
  • ½ teaspoon pure vanilla extract
  • Cocoa powder for dusting
  • Lady fingers for garnish
