Ingredients

The following ingredients have 4 Servings
  • one box vanilla cake mix
  • one can pumpkin (15 oz)
  • one egg
  • 1/4 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • icing: Eggnog Frosting (click HERE for recipe)

Instruction

  • Combine all ingredients in a large bowl and beat with an electric mixer.
  • Pour batter into a lined cupcake pan (fill about 1/2 to 3/4 full)
  • Bake at 350 degrees for approximately 20 minutes, until a toothpick comes out clean.
  • Allow to cool completely before icing.
