Ingredients
The following ingredients have 6 Servings
- 1 egg and 1 egg white (lightly beaten)
- 2 cups Greek yogurt
- 1/4 cup almond milk (or milk of choice)
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat pastry flour
- 1/2 15 ounce can pumpkin (must be 100% pumpkin, NOT pumpkin pie filling)
- 3/4 cup finely ground flax seed
- 1 scoop protein powder (optional, you can use any protein you want or leave it out)
- 1 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1 tsp pure vanilla
Instruction
- In a medium bowl, mix eggs, pumpkin and Greek yogurt.
- Stir in baking soda, flax seed, protein, salt, flour, cinnamon, pumpkin spice, and vanilla; mix until blended.
- Heat a lightly oiled griddle or frying pan over medium-high heat.
- Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.
