Ingredients
The following ingredients have 1 Servings
- 1 1/2 cups all-purpose flour
- 1/2 cup wheat flour
- 1 1/2 cups old-fashioned oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp pumpkin pie spice
- 1/8 tsp allspice
- 1 cup butter (softened)
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 cup pure pumpkin (not pie filling)
- 1 egg (room temperature)
- 2 tsp vanilla extract
- 1 cup walnuts
- 1 cup raisins
Instruction
- Combine flour, oats, baking soda and spices in a medium bowl and set aside.
- Cream together butter and sugars until light and fluffy.
- Beat in egg and mix until well combined.
- Add pumpkin, egg, and vanilla and mix until well combined.
- Slowly add in flour mixture stirring just until combined.
- Stir in walnuts and raisins.
- Chill dough for 1 hour.
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Drop 1/4 cup cookie dough onto lined baking sheets and press dough down slightly with the back of a spoon. (The dough does not spread much when baking.)
- Bake for 15-17 minutes or until just lightly browned.
- Cool for 3-4 minutes on baking sheets before removing to wire racks to cool completely.
