- 1 cup shortening
- 1 cup packed brown sugar
- 1 cup white sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- ¼ tsp cloves
- ¼ tsp nutmeg
- ½ tsp ginger
- 1 tsp cinnamon
- ½ tsp salt
- ½ tsp baking powder
- 2 tsp baking soda
- 2 ½ cups flour
- 1 ½ cups quick oatmeal
- 2 Tbsp. butter (melted)
- 1 ½ Tbsp. milk
- 2 tsp. maple extract
- 2 cups powdered sugar
Instruction
- Prep: Start preheating the oven to 375 degree F. Then, spray a baking sheet with non-stick cooking spray, or line with parchment paper or a silicon mat. Set it aside.
- Batter: In a large mixing bowl, cream together the shortening and the brown and white sugars. Then, beat in the eggs, vanilla extract and the pumpkin puree. Next, add the spices, the cloves, nutmeg, ginger, cinnamon and salt, stir to combine. After that, add in the baking powder, baking soda and flour. Lastly, add in the quick oats and stir all ingredients until combined.
- Bake: Proceed to drop by spoonful's onto the prepared baking sheet and bake for 10minutes. This should make about 20 cookies, to result in 10 complete sandwich cookies. Once baking is complete, let the cookies cool while you whip up the frosting center.
- Buttercream frosting and assemble: In a medium size bowl, whisk together the melted butter, milk, maple extract and powder sugar. If needed, add more milk or sugar to get desired spreading consistency.
- Continue to spread a spoonful of frosting onto one cookie, then press another cookie onto the frosting to create the sandwich. Let cool and set for 10-15 minutes, serve and enjoy!
