Ingredients

The following ingredients have 7 Servings
  • 500g pumpkin
  • 2 large eggs
  • 1 clove garlic, minced
  • 3 tbsp chopped parsley
  • 4 level tbsp plain flour
  • 4 tbsp grated pecorino or parmesan cheese
  • Salt and pepper
  • 500ml extra virgin olive oil

Instruction

  • <p>Steam pumpkin in pieces in a little water until tender. </p> <p>Remove skin and mash flesh with fork. </p> <p>In a large bowl, beat eggs then mix in garlic, parsley, flour and cheese to obtain smooth paste. </p> <p>Mix in mashed pumpkin flesh. Season to taste. </p> <p>In a pan, heat olive oil and form each fritter using 1 tbsp of mixture. </p> <p>Once golden, place on absorbent paper. Add salt if necessary and serve hot as a snack or as part of a larger meal.</p>
