Ingredients

The following ingredients have 1 Servings
  • 1/2 onion (sliced,)
  • 1 tablespon oil
  • 1/2 large tomato (thinly sliced)
  • 2 eggs
  • 1/4-1/2 cup pulled pork with its sauce (preferable a tomato based sauce)
  • 2 tablespoons canned beans (black or brown)
  • 2 tablespoons cubed feta (omit for dairy-free version)
  • fresh herbs (cilantro, scallions, etc, chopped)

Instruction

  • Heat oil in pan over medium heat and add onions. Cook for a couple minutes or until translucent. Add tomatoes and cook for a couple minutes.
  • Add pulled pork and beans and mix together.
  • Make 2 "nests" to crack the eggs into. Crack the eggs into the pan and reduce heat to medium-low. Add salt to taste.
  • Cook until eggs are set. Sprinkle with cubed feta and fresh herbs to garnish.
