Ingredients
The following ingredients have 1 Servings
- 1/2 onion (sliced,)
- 1 tablespon oil
- 1/2 large tomato (thinly sliced)
- 2 eggs
- 1/4-1/2 cup pulled pork with its sauce (preferable a tomato based sauce)
- 2 tablespoons canned beans (black or brown)
- 2 tablespoons cubed feta (omit for dairy-free version)
- fresh herbs (cilantro, scallions, etc, chopped)
Instruction
- Heat oil in pan over medium heat and add onions. Cook for a couple minutes or until translucent. Add tomatoes and cook for a couple minutes.
- Add pulled pork and beans and mix together.
- Make 2 "nests" to crack the eggs into. Crack the eggs into the pan and reduce heat to medium-low. Add salt to taste.
- Cook until eggs are set. Sprinkle with cubed feta and fresh herbs to garnish.
