Ingredients
The following ingredients have 4 Servings
- BBQ Jackfruit:
- 1 20oz Can Jackfruit in Brine (drained)
- 1 Cup Chopped Portobello Mushrooms
- 1/4 Cup Finely Chopped Sweet Onion
- 1 Tsp Dried Oregano
- 1/2 Tsp Minced Garlic
- 1/2 Tsp Smoked Paprika
- 1/4 Tsp Cumin
- 1/4 Tsp Black Pepper
- 1 Cup BBQ Sauce
- Tahini Slaw:
- 2 Cups Raw Broccoli Slaw
- 2 TB Tahini
- 1 TB Red Wine Vinegar
- 1 Tsp Dijon Mustard
- 4 Small Gluten-Free Buns
Instruction
- In a large seasoned cast iron skillet, add all the bbq jackfruit ingredients except the bbq sauce to heat over medium high heat for about 10 minutes.
- Pour on the bbq sauce and take 2 forks to shred up the jackfruit and mix everything around with the sauce.
- To make the tahini slaw, simply mix together all slaw ingredients in a bowl and set aside.
- To serve, slice your gluten-free buns/bread, place the pulled bbq jackfruit down first, then top with some of the tahini slaw before closing up the sandwiches.
