Ingredients

The following ingredients have 4 Servings
  • 3-4 ripe peaches (skinned and cut into chunks)
  • 1/2 cup butter (4 Tbsp.)
  • 2 tsp. cinnamon
  • Dash of nutmeg
  • 3 eggs
  • 1/2 cup flour
  • 1/2 cup milk
  • 1/2 tsp. salt
  • 1 Tbsp. sour cream (I used Greek Yogurt)
  • 1 tsp. vanilla

Instruction

  • Heat oven to 400 degrees. In medium/large cast iron skillet, sauté 4 peaches in 4 Tbsp. butter, 2 tsp. cinnamon & a dash of nutmeg.
  • Meanwhile, blend 3 eggs, 1/2 cup flour, 1/2 cup milk, 1/2 tsp. of salt, 1 Tbsp. sour cream or plain yogurt & 1 tsp. vanilla in blender.
  • Pour egg batter over peaches and place skillet in preheated oven for 20 mins. Serve with butter & applesauce, or jam, or whipped cream!
