Ingredients
The following ingredients have 4 Servings
- 3-4 ripe peaches (skinned and cut into chunks)
- 1/2 cup butter (4 Tbsp.)
- 2 tsp. cinnamon
- Dash of nutmeg
- 3 eggs
- 1/2 cup flour
- 1/2 cup milk
- 1/2 tsp. salt
- 1 Tbsp. sour cream (I used Greek Yogurt)
- 1 tsp. vanilla
Instruction
- Heat oven to 400 degrees. In medium/large cast iron skillet, sauté 4 peaches in 4 Tbsp. butter, 2 tsp. cinnamon & a dash of nutmeg.
- Meanwhile, blend 3 eggs, 1/2 cup flour, 1/2 cup milk, 1/2 tsp. of salt, 1 Tbsp. sour cream or plain yogurt & 1 tsp. vanilla in blender.
- Pour egg batter over peaches and place skillet in preheated oven for 20 mins. Serve with butter & applesauce, or jam, or whipped cream!
