Ingredients
The following ingredients have 4 Servings
- 1 cup quinoa
- 1/2 cup yellow bell pepper (cubes)
- 1/2 cup red bell pepper (cubes)
- 1/2 cup capsicum (cubes)
- 1/4 cup peanuts
- 1/4 cup green peas
- 2 green chilies (chopped)
- 1/2 cup onion (chopped)
- 1/2 cup tomato (chopped)
- 1/2 cup tofu (cubes)
- Salt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Parsley for garnishing
Instruction
- In a big pan boil 5 cup of water, when starts boiling put quinoa, pinch of salt and let it boil for 15 mis
- Strain the quinoa & keep it as side.
- Now in a wok put some oil & roast peanuts, when it turns brown add green chili.
- When the chilies start crackling, add onion & saute till it gets golden. Now add all three bell peppers, tomato, green peas & tofu, saute it for 5 mins.
- Now add Quinoa & mix well
- Add salt as per your taste, squeeze lemon & garnish with parsely
