Ingredients

The following ingredients have 4 Servings
  • 1 cup quinoa
  • 1/2 cup yellow bell pepper (cubes)
  • 1/2 cup red bell pepper (cubes)
  • 1/2 cup capsicum (cubes)
  • 1/4 cup peanuts
  • 1/4 cup green peas
  • 2 green chilies (chopped)
  • 1/2 cup onion (chopped)
  • 1/2 cup tomato (chopped)
  • 1/2 cup tofu (cubes)
  • Salt
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Parsley for garnishing

Instruction

  • In a big pan boil 5 cup of water, when starts boiling put quinoa, pinch of salt and let it boil for 15 mis
  • Strain the quinoa & keep it as side.
  • Now in a wok put some oil & roast peanuts, when it turns brown add green chili.
  • When the chilies start crackling, add onion & saute till it gets golden. Now add all three bell peppers, tomato, green peas & tofu, saute it for 5 mins.
  • Now add Quinoa & mix well
  • Add salt as per your taste, squeeze lemon & garnish with parsely
