Ingredients

The following ingredients have 2 Servings
  • 1 can tuna (drained)
  • 1 avocado (chopped into small pieces)
  • 1 lime (juiced)
  • 1 hard cooked egg (chopped into pieces)
  • 1 tbsp. diced shallot (or onion)
  • 1 stalk celery (thinly sliced on the diagonal)
  • 1/4 cup fresh chopped parsley
  • 1/2 tbsp. mustard
  • sea salt & pepper (to taste)

Instruction

  • In a medium sized mixing bowl add the avocado and lime juice. Stir well. This helps to keep the avocado from browning.
  • Add the remaining ingredients and stir well again
  • Serve over greens, or as a sandwich
