Ingredients

The following ingredients have 3 Servings
  • 250g block halloumi, cut into 6 slices
  • 6 slices roasted red pepper from a jar, cut the same size as the halloumi
  • 6 slices prosciutto
  • ½ honeydew melon, halved and deseeded
  • 1 red chilli, deseeded and finely chopped
  • a handful mint, roughly chopped
  • 1 tbsp white wine vinegar
  • 1 tbsp extra-virgin olive oil

Instruction

  • Wrap each slice of cheese in pepper and then prosciutto.
  • Slice the melon and remove the skin. Put in a bowl with the chilli, mint, vinegar and oil. Season and toss together.
  • Brush the cheese parcels with oil. Heat a frying pan and fry them until golden all over and the cheese is becoming squidgy. Serve with the melon and some bread, if you like.
