Ingredients
The following ingredients have 4 Servings
- 8 ounces prepared prime rib
- 1 teaspoon olive oil
- 2 tablespoon Cajun seasoning
- ¼ cup beef or chicken stock
- 1 large poblano pepper
- Shredded pepper jack cheese
- 3 tablespoons mayonnaise
- 1 teaspoon garlic powder
- 2 large bolilo buns for serving (or any crusty sandwich bread)
Instruction
- Roughly chop the prime rib and add it to a pan with olive heated to medium heat. Heat it through about a minute.
- Add the Cajun seasoning and stock. Stir and simmer until the stock reduces and the prime rib is nicely coated with seasonings.
- Roast the poblano pepper over an open flame, flipping often, until the skin chars and blackens. You can also roast it in the oven or broiler. See How to Roast Chili Peppers. Wrap the poblano in paper towel until it cools, then peel off the charred skins. Finely dice the poblano.
- Heat the oven to 350 degrees F.
- Slice open the buns and stuff them with prime rib. Top with shredded cheese and poblano peppers.
- Bake for 5 minutes to allow cheeses to melt and get the bread a bit crusty.
- Mix the mayo and garlic powder and top your sammiches! Enjoy!
