Ingredients

The following ingredients have 8 Servings
  • 3 Tbsp ghee/clarified butter (divided if cooking on stove-top)
  • 1 large onion (peeled and chopped)
  • 1 tsp grated ginger
  • 3 cups brown basmati rice (see notes)
  • 2 cups water (see notes)
  • 1 cup thin coconut milk
  • 1 tsp salt
  • 3 Roma tomatoes (seeded and diced)
  • 2 lbs boneless skinless firm white fish fillet (see notes, cut into large chunks )
  • 1/2 tsp turmeric powder
  • 2 tsp chili powder
  • 1/4 tsp salt
  • 4 bay leaves
  • 1 large cinnamon stick
  • 5 cloves
  • 1 tsp turmeric powder
  • 5 cardamom pods
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Small bunch of cilantro leaves (extra for garnishing)
  • Small bunch of mint leaves

Instruction

  • Rinse the rice to get rid of any impurities. Make sure to drain off all water. There is no need to soak the rice with pressure cooker. Marinade the fish with the marinade ingredients and let stand for 20 minutes.
