Ingredients
The following ingredients have 4 Servings
- 14 ozs Beets
- salt
- 0.875 cup Red wine vinegar
- 0.25 cup dry Red wine
- 3 cloves
- 6 allspice
- 5 ozs onions (chopped)
- 2 cups diced cooking Apple
- 0.75 oz fresh ginger (finely chopped)
- 5 Tbsps raisins
- 5 Tbsps light brown sugar
Instruction
- Cook the beetroot in a pan of boiling salted water for 20 minutes. Drain and cut into small cubes.
- Put the red wine vinegar, wine, cloves and allspice in a pan and bring to a boil. Add the onions and apples and simmer for 10 minutes.
- Add the beetroot, ginger, raisins and brown sugar and simmer for a further 15 minutes.
- Remove the cloves and allspice and season with salt to taste.
- Pour into sterilised jars and seal tightly. Store in a cool, dark place and consume quickly after opening.
