Ingredients

The following ingredients have 4 Servings
  • 14 ozs Beets
  • salt
  • 0.875 cup Red wine vinegar
  • 0.25 cup dry Red wine
  • 3 cloves
  • 6 allspice
  • 5 ozs onions (chopped)
  • 2 cups diced cooking Apple
  • 0.75 oz fresh ginger (finely chopped)
  • 5 Tbsps raisins
  • 5 Tbsps light brown sugar

Instruction

  • Cook the beetroot in a pan of boiling salted water for 20 minutes. Drain and cut into small cubes.
  • Put the red wine vinegar, wine, cloves and allspice in a pan and bring to a boil. Add the onions and apples and simmer for 10 minutes.
  • Add the beetroot, ginger, raisins and brown sugar and simmer for a further 15 minutes.
  • Remove the cloves and allspice and season with salt to taste.
  • Pour into sterilised jars and seal tightly. Store in a cool, dark place and consume quickly after opening.
