Ingredients
The following ingredients have 4 Servings
- 16 sheets Rice paper
- 5 ozs green Asparagus
- salt
- 3 Tbsps sesame oil
- 8 Prawn
- 1 Tbsp Rice vinegar
- 1 red chili pepper (finely chopped)
- 1 tsp Fish sauce
- 1 Cucumber (cut into sticks)
- 0.5 bunch Chives (sliced)
- 8 Lettuce
Instruction
- Spread the sheets of rice paper out separately between 2 damp tea towels.
- Cook the asparagus and in salted boiling water for 10 minutes, until cooked but still retaining a little bite. Drain well.
- Heat 1 tablespoon sesame oil and briefly fry the prawns. Season with salt.
- Mix together the remainning sesame oil, rice vinegar, chilli and fish sauce to make a dressing.
- Place the sheets of rice paper together in twos, on on top of the other, and lay 1 lettuce leaf on each pair. Flatten slightly.
- Put one prawn, some cucumber sticks, chives and asparagus in the middle of each, with the top of the filling level with one edge. Sprinkle with a little dressing.
- Fold 1 side over the filling and then roll up firmly. Stick the edges with a little water.
