Ingredients
The following ingredients have 4 Servings
- 14 ozs broad Rice noodles
- 3.333 cups Prawn (peeled and deveined)
- 3 Tbsps Nut oil
- 2 cloves garlic cloves (finely chopped)
- 1 cup Peanuts (roughly chopped)
- 1 red chili pepper (finely chopped)
- 1 tsp brown sugar
- 4 Tbsps sweet Chili sauce (bought)
- 2 Tbsps chopped cilantro
- 1 Lime (juice)
- salt
- Lime wedge (to serve)
Instruction
- Blanch the noodles in plenty of boiling water for about 3 minutes, or according to the package instructions. Then drain, refresh in cold water and drain thoroughly.
- Wash the prawns and pat dry.
- Heat the oil in a wok and fry the prawns quickly on all sides over a high heat. Add the garlic, peanuts, chopped chilli and sugar and fry briefly all together. Add the noodles, mix well and stir-fry all together for about 1 minute.
- Then add the chilli sauce, coriander and lime juice and season to taste with salt. Serve on plates with lime wedges.
