Ingredients

The following ingredients have 4 Servings
  • 3 tablespoons butter
  • 1 teaspoon olive oil
  • 2 large red potatoes ((chopped into small chunks))
  • 2 tablespoons onions ((chopped))
  • 2 tablespoons red peppers ((chopped))
  • 2 tablespoons green peppers ((chopped))
  • 3 tablespoons chicken broth
  • 2 teaspoons parsley ((chopped))
  • Salt and pepper to taste

Instruction

  • In a large pan over medium high heat, melt butter and warm oil.
  • Add in potatoes, onions, and peppers. Saute for 4 minutes.
  • Stir in chicken broth, parsley, and salt and pepper.
  • Cover and cook for 10 minutes.
  • Remove lid after 10 minutes. Stir and continue cooking a few minutes or until liquid absorbs.
  • Serve immediately.
