Ingredients

The following ingredients have 8 Servings
  • 8 potato cubed large
  • 6 bacon rashers diced
  • 310 g canned corn drained
  • 1 cup cream
  • 1/2 cup mayonnaise
  • 1/2 tsp curry powder
  • 1 tsp dijon mustard
  • 1 pinch seasoning *to taste
  • 1 cup cheddar cheese grated *to serve
  • 1 cup coarse fresh breadcrumbs *to serve

Instruction

  • Boil potatoes until slightly firm.
  • Fry bacon until brown.
  • Place potatoes in a baking tray, combine corn and bacon.
  • Combine cream, mayonnaise, curry and mustard in a jug.
  • Pour over potatoes and season with salt and pepper.
  • Sprinkle with grated cheese and breadcrumbs.
  • Bake at 180C for 30-45 minutes, or until golden.
