Ingredients
The following ingredients have 8 Servings
- 8 potato cubed large
- 6 bacon rashers diced
- 310 g canned corn drained
- 1 cup cream
- 1/2 cup mayonnaise
- 1/2 tsp curry powder
- 1 tsp dijon mustard
- 1 pinch seasoning *to taste
- 1 cup cheddar cheese grated *to serve
- 1 cup coarse fresh breadcrumbs *to serve
Instruction
- Boil potatoes until slightly firm.
- Fry bacon until brown.
- Place potatoes in a baking tray, combine corn and bacon.
- Combine cream, mayonnaise, curry and mustard in a jug.
- Pour over potatoes and season with salt and pepper.
- Sprinkle with grated cheese and breadcrumbs.
- Bake at 180C for 30-45 minutes, or until golden.
