The following ingredients have 12 Servings
  • 3/4 cup (~3 ounces) finely chopped Spanish chorizo ((cured spiced pork sausage, firm like salami, not the soft hispanic chorizo))
  • 2 Tablespoons olive oil
  • 2 cups finely chopped onions
  • 3 cloves garlic (finely chopped)
  • 1 red bell pepper (finely chopped)
  • 1/2 cup finely chopped green pepper
  • 1 Turkish bay leaf (or 1/2 California bay leaf)
  • 1/4 teaspoon salt (or more depending on your taste. Chorizo adds salt.)
  • 1/4 teaspoon dried oregano (crumbled)
  • 1/2 pound yellow-fleshed potato (such as Yukon Gold)
  • empanada dough (recipe below)
  • egg wash (1 egg lightly beaten with 1 Tablespoon water)
  • 2 1/4 cups unbleached all-purpose flour
  • 1 1/2 teaspoon salt
  • 1 stick cold unsalted butter (cut into 1/2 inch cubes)
  • 1 large egg
  • 1/3 cup ice water
  • 1 Tablespoon distilled white vinegar
