The following ingredients have 12 Servings
- 3/4 cup (~3 ounces) finely chopped Spanish chorizo ((cured spiced pork sausage, firm like salami, not the soft hispanic chorizo))
- 2 Tablespoons olive oil
- 2 cups finely chopped onions
- 3 cloves garlic (finely chopped)
- 1 red bell pepper (finely chopped)
- 1/2 cup finely chopped green pepper
- 1 Turkish bay leaf (or 1/2 California bay leaf)
- 1/4 teaspoon salt (or more depending on your taste. Chorizo adds salt.)
- 1/4 teaspoon dried oregano (crumbled)
- 1/2 pound yellow-fleshed potato (such as Yukon Gold)
- empanada dough (recipe below)
- egg wash (1 egg lightly beaten with 1 Tablespoon water)
- 2 1/4 cups unbleached all-purpose flour
- 1 1/2 teaspoon salt
- 1 stick cold unsalted butter (cut into 1/2 inch cubes)
- 1 large egg
- 1/3 cup ice water
- 1 Tablespoon distilled white vinegar
