Ingredients
The following ingredients have 4 Servings
- 1/4 cup plus 1 tablespoon all purpose flour
- 1 cup thawed shredded potato hash brown (like Cascadian Farm™ Organic frozen hash browns)
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon baking powder
- 1 tablespoon melted butter
- 4 fried eggs
- 1 teaspoon sugar
- 2 whole eggs
- 4 pieces thick slab applewood bacon, cooked
- 2 pinches kosher salt
- 1 pinch ground black pepper
- 1/2 cup buttermilk
Instruction
- In a medium bowl combine the thawed hash browns and butter. Use a potato masher or fork and mash until it is only slightly chunky.
- Add in the flour, sugar, baking powder, salt, pepper and chopped dill. Mix to combine.
- Whisk the eggs with the butter milk until blended. Pour the buttermilk/egg mixture into the dry ingredients and stir until combined.
- Spray your waffle maker with baking spray and preheat according to your waffle iron instruction manual.
- Once preheated pour the batter into the waffle iron, close and cook until golden and crispy.
- Serve the waffles with a few strips of bacon and top with a fried egg.
