Ingredients

The following ingredients have 4 Servings
  • 1/4 cup plus 1 tablespoon all purpose flour
  • 1 cup thawed shredded potato hash brown (like Cascadian Farm™ Organic frozen hash browns)
  • 1 tablespoon chopped fresh dill
  • 1/2 teaspoon baking powder
  • 1 tablespoon melted butter
  • 4 fried eggs
  • 1 teaspoon sugar
  • 2 whole eggs
  • 4 pieces thick slab applewood bacon, cooked
  • 2 pinches kosher salt
  • 1 pinch ground black pepper
  • 1/2 cup buttermilk

Instruction

  • In a medium bowl combine the thawed hash browns and butter. Use a potato masher or fork and mash until it is only slightly chunky.
  • Add in the flour, sugar, baking powder, salt, pepper and chopped dill. Mix to combine.
  • Whisk the eggs with the butter milk until blended. Pour the buttermilk/egg mixture into the dry ingredients and stir until combined.
  • Spray your waffle maker with baking spray and preheat according to your waffle iron instruction manual.
  • Once preheated pour the batter into the waffle iron, close and cook until golden and crispy.
  • Serve the waffles with a few strips of bacon and top with a fried egg.
