  • 1 tablespoon olive oil
  • ½ teaspoon finely chopped, fresh rosemary, (washed and dried)
  • ½ teaspoon brown sugar
  • ⅛ teaspoon chipotle powder (OR pinch of cayenne)
  • ⅛ teaspoon salt
  • olive oil for the pot
  • ¾ cup roughly chopped onion
  • 2½ teaspoons finely chopped, fresh rosemary, (washed and dried)
  • ½ teaspoon ground cloves
  • 2 pounds Yukon Gold potatoes, (peeled and roughly chopped)
  • ¾ pound roasted, peeled chestnuts (roughly chopped)
  • 4 cups vegetable stock
  • salt and pepper to taste
