  • 4-5 tablespoons ice water
  • 2 medium white new potatoes
  • 1 1/2 cups shredded Gruyere cheese
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon heavy cream (for brushing on the edges of the pastry)
  • coarse salt (for sprinkling on the edge of the pastry)
  • parsley or chives (for garnish)
