- 4-5 tablespoons ice water
- 2 medium white new potatoes
- 1 1/2 cups shredded Gruyere cheese
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon heavy cream (for brushing on the edges of the pastry)
- coarse salt (for sprinkling on the edge of the pastry)
