Ingredients

The following ingredients have 4 Servings
  • 2 eggs
  • 1 TB double cream
  • salt and white pepper
  • 1 tsp unsalted butter
  • 1/4 avocado (sliced)
  • 50 g smoked salmon
  • 1 TB soft goat's cheese (or full-fat cream cheese)
  • freshly ground black pepper
  • snipped chives (to garnish)

Instruction

  • Whisk the eggs and cream in a small jug. Season the mixture with salt and white pepper.
  • Melt the butter in a non-stick pan. Once foaming, add the egg mixture and immediately reduce the heat or remove the pan completely from the heat. Stir continuously with a silicon spatula until the eggs are cooked. (This ‘gentle’ cooking ensures creamy scrambled eggs, and not rubbery eggs.)
  • Serve the scrambled eggs with the sliced avocado, smoked salmon and goat’s cheese / cream cheese. Season with freshly ground black pepper (and Pink Himalayan Salt, if needed). Garnish with snipped chives if you are feeling extra posh - and TUCK IN!
