Ingredients
The following ingredients have 4 Servings
- 4 cups milk (3.5% fat)
- 2 tsps grated Lemon peel
- 0.667 cup Rice pudding (short-grain)
- 0.333 cup sugar
- 5 eggs
- cinnamon (for decoration)
Instruction
- Take 4 tablespoons of the milk and set aside. Put the rest of the milk into a pan with the lemon peel and bring to a boil. Add the rice and sugar, cover and cook very gently over a low heat for about 40 minutes until the rice is swollen and soft.
- Separate the eggs. Beat the egg whites until stiff. Whisk the egg yolks with the reserved milk and add to the rice. Reheat, but do not let it boil again.
- Remove from the heat and fold in the beaten egg whites. Spoon into bowls, decorate with cinnamon and chill well before serving.
