Ingredients

The following ingredients have 2 Servings
  • 1 cup flour
  • 3/4 cup milk
  • 1 egg
  • 4 tablespoons sugar
  • 1/2 teaspoon baking powder
  • 1 tablespoon butter (melted)
  • pinch salt
  • 2 boneless pork chops
  • 1/2 cup flour
  • 1/2 cup panko
  • 1 egg
  • 4 slices bacon (optional)
  • 2 tablespoons sriracha (for topping)
  • salt & pepper (to taste)
  • 1/4 cup plain Greek yogurt
  • 1/4 cup maple syrup

Instruction

  • Preheat the oven to 375F. In a small bowl, whisk together the yogurt and maple syrup until smooth. Refrigerate yogurt until ready to serve.
  • Prepare the pork chops by patting dry, tossing in flour, then dipping into the whisked egg, and finally into the panko until a thick crust has formed. Cover the pork chops completely with breading.
  • Place the pork chops onto a baking sheet and pop into the preheated oven for 20-25 minutes, or until the internal temperature reaches 160F.
  • While the pork chops are cooking, preheat and grease the waffle iron. Whisk together the flour, milk, egg, sugar, melted butter, baking soda and a pinch of salt. The waffle batter should be thick but smooth.
  • Using a measuring cup, pour the batter in 1/2 cups onto the preheated waffled iron. Cook waffles according to the waffle iron instructions, about 3-4 minutes per side.
  • Remove the pork chops from the oven when ready and let rest while the waffles finish cooking.
  • Arrange the pork chops on top of the waffles and drizzle on the maple yogurt sauce. Garnish with slices of bacon, as desired. Serve breakfast for dinner, and enjoy!
