Ingredients

- 1 cup flour
- 3/4 cup milk
- 1 egg
- 4 tablespoons sugar
- 1/2 teaspoon baking powder
- 1 tablespoon butter (melted)
- pinch salt
- 2 boneless pork chops
- 1/2 cup flour
- 1/2 cup panko
- 1 egg
- 4 slices bacon (optional)
- 2 tablespoons sriracha (for topping)
- salt & pepper (to taste)
- 1/4 cup plain Greek yogurt
- 1/4 cup maple syrup
Instruction
- Preheat the oven to 375F. In a small bowl, whisk together the yogurt and maple syrup until smooth. Refrigerate yogurt until ready to serve.
- Prepare the pork chops by patting dry, tossing in flour, then dipping into the whisked egg, and finally into the panko until a thick crust has formed. Cover the pork chops completely with breading.
- Place the pork chops onto a baking sheet and pop into the preheated oven for 20-25 minutes, or until the internal temperature reaches 160F.
- While the pork chops are cooking, preheat and grease the waffle iron. Whisk together the flour, milk, egg, sugar, melted butter, baking soda and a pinch of salt. The waffle batter should be thick but smooth.
- Using a measuring cup, pour the batter in 1/2 cups onto the preheated waffled iron. Cook waffles according to the waffle iron instructions, about 3-4 minutes per side.
- Remove the pork chops from the oven when ready and let rest while the waffles finish cooking.
- Arrange the pork chops on top of the waffles and drizzle on the maple yogurt sauce. Garnish with slices of bacon, as desired. Serve breakfast for dinner, and enjoy!
