Ingredients
The following ingredients have 4 Servings
- 11 ozs Rice noodles
- 1 chili pepper (finely chopped)
- 3 Tbsps sesame oil
- 3.333 cups pork fillets (cut into strips)
- 2 garlic cloves (finely chopped)
- 1 Leek (cut into thin strips)
- 2 cups shiitake mushrooms (sliced)
- 0.5 cup unsalted Peanuts
- 2 Tbsps Fish sauce
- 2 Tbsps dark soy sauce
- 1 Tbsp brown sugar
- 0.375 oz fresh Thai basil (roughly chopped)
- 1 red chili pepper (seeds removed and finely sliced)
- 1 scallion (finely sliced)
Instruction
- Put the chilli pepper into a shallow dish with 1 tbsp sesame oil.
- Add the pork, stir, cover, chill and marinate for 30 minutes.
- Cook the noodles according to the directions on the packet and drain.
- Heat 2 tbsp sesame oil in a wok and stir fry the pork for a few minutes.
- Add the garlic and leek and stir fry for another 5 minutes.
- Add the mushrooms and peanuts and fry for a further 3–4 minutes. Add a splash of water, if needed.
- Season with fish sauce and soy sauce and sugar.
- Stir in the noodles and warm through, then stir in the basil.
- Serve garnished with red chilli and spring onion.
