Ingredients

The following ingredients have 4 Servings
  • 11 ozs Rice noodles
  • 1 chili pepper (finely chopped)
  • 3 Tbsps sesame oil
  • 3.333 cups pork fillets (cut into strips)
  • 2 garlic cloves (finely chopped)
  • 1 Leek (cut into thin strips)
  • 2 cups shiitake mushrooms (sliced)
  • 0.5 cup unsalted Peanuts
  • 2 Tbsps Fish sauce
  • 2 Tbsps dark soy sauce
  • 1 Tbsp brown sugar
  • 0.375 oz fresh Thai basil (roughly chopped)
  • 1 red chili pepper (seeds removed and finely sliced)
  • 1 scallion (finely sliced)

Instruction

  • Put the chilli pepper into a shallow dish with 1 tbsp sesame oil.
  • Add the pork, stir, cover, chill and marinate for 30 minutes.
  • Cook the noodles according to the directions on the packet and drain.
  • Heat 2 tbsp sesame oil in a wok and stir fry the pork for a few minutes.
  • Add the garlic and leek and stir fry for another 5 minutes.
  • Add the mushrooms and peanuts and fry for a further 3–4 minutes. Add a splash of water, if needed.
  • Season with fish sauce and soy sauce and sugar.
  • Stir in the noodles and warm through, then stir in the basil.
  • Serve garnished with red chilli and spring onion.
