Ingredients
The following ingredients have 6 Servings
- 200 g unsalted butter softened
- 200 g caster sugar
- 1 orange juiced small
- 1 orange rind small
- 3 egg beaten
- 200 g ground almonds
- 200 g instant polenta
- 1 tsp baking powder
- 6 scoops vanilla ice cream *to serve
Instruction
- Preheat oven to 180C. Grease a 23 cm round cake tin with some butter, and line the base with baking paper.
- Beat together butter and sugar with electric mixer until light and fluffy.
- Add the orange juice and rind, eggs and almonds. Sift in the polenta and baking powder and beat until smooth.
- Spread the mixture into the prepared tin, smoothing with a pallete knife.
- Bake for 35-40 minutes until firm and golden. Remove from oven and leave to cool in tin for 20 minutes.
- Transfer cake to wire rack to cool.
- Cut cake into slices and serve warm or cold, with ice-cream.
