Ingredients

The following ingredients have 6 Servings
  • 200 g unsalted butter softened
  • 200 g caster sugar
  • 1 orange juiced small
  • 1 orange rind small
  • 3 egg beaten
  • 200 g ground almonds
  • 200 g instant polenta
  • 1 tsp baking powder
  • 6 scoops vanilla ice cream *to serve

Instruction

  • Preheat oven to 180C. Grease a 23 cm round cake tin with some butter, and line the base with baking paper.
  • Beat together butter and sugar with electric mixer until light and fluffy.
  • Add the orange juice and rind, eggs and almonds. Sift in the polenta and baking powder and beat until smooth.
  • Spread the mixture into the prepared tin, smoothing with a pallete knife.
  • Bake for 35-40 minutes until firm and golden. Remove from oven and leave to cool in tin for 20 minutes.
  • Transfer cake to wire rack to cool.
  • Cut cake into slices and serve warm or cold, with ice-cream.
