Ingredients

The following ingredients have 8 Servings
  • 1 pound of elbow macaroni
  • 2 tablespoons salt for macaroni water
  • 8 ounces sharp cheddar cheese (grated)
  • 8 ounces white cheddar cheese (see notes)
  • 4 ounces gruyere
  • 4 cups half and half (or whole milk)
  • 4 tablespoons butter
  • 6 tablespoons flour
  • 1 poblano pepper
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1/4 teaspoon freshly ground nutmeg
  • 4 slices tuscan type bread (cut into one inch cubes (or use heavy farmhouse bread).)
