Ingredients
The following ingredients have 4 Servings
- 4 Corn tortillas
- Sugar +Cinnamon
- 1 Ripe Plantain
- 1/4 Cup butter
- 6 tablespoons brown sugar
- 1 teaspoon rum or vanilla extract (optional)
- 1/2 teaspoon cinnamon
- 6 Chips Ahoy! Cookies
- 2 cups Vanilla Ice Cream
Instruction
- For taco cups
- Preheat oven to 400 Degrees F
- Flip over a muffin tin and spray with nonstick spray
- Soften the tortillas but placing them inside a damp paper towel and microwaving them for 30 seconds
- Place the soft tortillas on a cutting board and spray them with nonstick spray
- Sprinkle with sugar and cinnamon
- Flip the tortilla over and repeat the same process with the cooking spray, sugar, and cinnamon
- Nestle a tortilla in the space between 4 cups of the muffin tin to form a bowl shape
- Repeat with the other tortillas
- Bake for 12-15 minutes or until crisp
- Remove from oven and let them cool
- For Plantains Foster
- Slice the plantain
- Place a skillet over medium heat and add the butter and brown sugar
- When the butter and brown sugar melts, add the plantain slices and cook until the plantains have softened. About 4-5 minutes. Stir often
- Add the rum extract and cinnamon. Stir until combined
- Assembly:
- Place the taco cups on a serving platter
- Add 1-2 scoops of ice cream
- Add the hot bananas foster
- Top with crumbled Chips Ahoy!
- Serve immediately
