Ingredients

The following ingredients have 4 Servings
  • 1½ pounds pizza dough (700 grams)
  • 14 cherry tomatoes or 6 or 7 plum tomatoes seeded and chopped into small pieces
  • ½ teaspoon basil (1/2 gram)
  • ½ teaspoon oregano (1/2 gram)
  • ¼ teaspoon salt (1 gram)
  • 2 tablespoons olive oil (26 grams)
  • 1 large potato very thinly sliced
  • ¼ teaspoon salt
  • 1-2 sprigs rosemary leaves
  • 5 or more pitted black olives chopped
  • ¼ cup pancetta or bacon chopped
  • 1 cup grated firm mozzarella (200 grams)

Instruction

  • Pre-heat oven to 450° (250° celsius).
  • In a medium pot of boiling water boil the sliced potatoes for approximately 8-10 minutes (until tender but not mushy), drain, rinse with cold water and towel dry.
  • In a medium bowl toss together all the ingredients for the Tomato Topping.
