Ingredients

The following ingredients have 4 Servings
  • 1 lb ground beef
  • 2/3 cup mini pepperoni
  • 1/4 cup Italian seasoned breadcrumbs
  • 1/3 cup milk
  • 1/4 cup parmesan cheese
  • 1 egg egg
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp Italian seasonings
  • 1/2 tsp pepper
  • 4 oz. mozzarella cheese (cubed)
  • 2 cups of your favorite marinara sauce
  • 1 15 oz can fire roasted tomatoes
  • 1/3 cup mini pepperonis
  • salt and pepper to taste
  • freshly shaved parmesan
  • minced basil

Instruction

  • Preheat oven to 425 degrees. 
  • In a large bowl, add all meatball ingredients except for the mozzarella cheese. Mix well with hands until well combined.
  • Grab 2 heaping tbsp. of meat and flatten in hand. Add mozzarella cube in the middle of the meat. Fold meat mixture around the cheese cube until completely hidden and roll into a ball. Place on a baking sheet.
  • Repeat with remaining meat. Bake for 15 minutes, or until golden brown.
  • While meatballs bake, preheat a saucepan to medium heat. Add marinara, fire roasted tomatoes, pepperoni, and seasonings. Let simmer while meatballs cook. 
  • When meatballs are done in the oven, add to the sauce. Let simmer until ready to serve. 
  • Garnish with freshly shaved parmesan and fresh basil.
