Ingredients
The following ingredients have 4 Servings
- 1 lb ground beef
- 2/3 cup mini pepperoni
- 1/4 cup Italian seasoned breadcrumbs
- 1/3 cup milk
- 1/4 cup parmesan cheese
- 1 egg egg
- 1 tsp salt
- 1 tsp garlic powder
- 1/2 tsp Italian seasonings
- 1/2 tsp pepper
- 4 oz. mozzarella cheese (cubed)
- 2 cups of your favorite marinara sauce
- 1 15 oz can fire roasted tomatoes
- 1/3 cup mini pepperonis
- salt and pepper to taste
- freshly shaved parmesan
- minced basil
Instruction
- Preheat oven to 425 degrees.
- In a large bowl, add all meatball ingredients except for the mozzarella cheese. Mix well with hands until well combined.
- Grab 2 heaping tbsp. of meat and flatten in hand. Add mozzarella cube in the middle of the meat. Fold meat mixture around the cheese cube until completely hidden and roll into a ball. Place on a baking sheet.
- Repeat with remaining meat. Bake for 15 minutes, or until golden brown.
- While meatballs bake, preheat a saucepan to medium heat. Add marinara, fire roasted tomatoes, pepperoni, and seasonings. Let simmer while meatballs cook.
- When meatballs are done in the oven, add to the sauce. Let simmer until ready to serve.
- Garnish with freshly shaved parmesan and fresh basil.
