Ingredients

The following ingredients have 4 Servings
  • 2 (8-ounce) boneless, skinless chicken breasts
  • 2 tablespoon grated Parmesan cheese, divided
  • 1/2 teaspoon dried oregano
  • 12 slice turkey pepperoni
  • 1/2 cup reduced-fat shredded mozzarella cheese, divided
  • 3 tablespoon whole-wheat bread crumbs
  • Cooking spray
  • 1/4 cup low-sodium marinara sauce

Instruction

  • Preheat oven to 425 degrees F. Coat a baking sheet with cooking spray.
  • Cut each chicken breast in half horizontally to create 2 cutlets. Cover with wax paper and lightly pound to 1/4-inch thickness. Sprinkle chicken cutlets evenly with 1 tablespoon Parmesan cheese and the oregano. Top each piece with 3 slices pepperoni and 1 tablespoon mozzarella cheese, then roll up jelly-roll style.
  • In a shallow dish, combine bread crumbs and remaining 1 tablespoon Parmesan cheese; mix well. Place chicken roll-ups in bread crumb mixture, coating evenly on all sides. Place seam-side down on baking sheet. Lightly spray with cooking spray.
  • Bake 15 minutes. Remove from oven and top each chicken roll-up with 1 tablespoon marinara sauce and remaining mozzarella cheese. Bake 5 to 7 more minutes or until chicken is no longer pink in center. Serve immediately.
