Ingredients
The following ingredients have 4 Servings
- 1 cup cooked quinoa ( made from ⅓ cup uncooked quinoa.)
- 3 eggs (lightly beaten)
- 1 cup shredded Italian-blend cheeses
- ¼ cup olives (sliced )
- ½ teaspoon Italian seasoning
- ¼ teaspoon salt
- 1/2 cup pizza sauce (warmed for dipping)
Instruction
- Preheat oven to 350° F. Lightly coat 12 mini muffin cups with nonstick cooking spray.
- In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
- Bake for 20 to 25 minutes or until golden brown. Serve with pizza sauce.
