Ingredients

The following ingredients have 4 Servings
  • 1 cup cooked quinoa ( made from ⅓ cup uncooked quinoa.)
  • 3 eggs (lightly beaten)
  • 1 cup shredded Italian-blend cheeses
  • ¼ cup olives (sliced )
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • 1/2 cup pizza sauce (warmed for dipping)

Instruction

  • Preheat oven to 350° F. Lightly coat 12 mini muffin cups with nonstick cooking spray.
  • In a large bowl, combine all ingredients. Divide quinoa mixture between prepared muffin cups.
  • Bake for 20 to 25 minutes or until golden brown. Serve with pizza sauce.
