Ingredients
The following ingredients have 6 Servings
- 2 pounds pork tenderloin, cut into 2-inch cubes
- 1 teaspoon sea salt
- 2 tablespoons extra-virgin olive oil
- 2/3 cup low-sodium soy sauce or tamari
- 1/2 cup seasoned rice vinegar
- 1/4 cup honey (optional)
- 1 tablespoon freshly grated ginger
- 1 tablespoon cornstarch
- 1 red bell pepper, diced
- 1 small pineapple, cored and diced
- 6 garlic cloves, minced
- 1 bunch green onions, thinly sliced
- 1 large avocado, diced
- Coconut rice, for serving (optional)
Instruction
- Season the pork all over with the salt
- Heat the oil in a large skillet over high heat
- Once the oil is glistening, working in batches, add the pork and cook, stirring, until golden brown, 5 to 7 minutes
- Transfer to a plate.Meanwhile, in a small bowl, combine the soy sauce, rice vinegar, honey, if desired, ginger, and cornstarch
- Whisk to mix well
- Add the bell pepper, pineapple, garlic, and the white and light green parts of the green onions to the skillet
- Cook, stirring, until the pineapple begins to soften and release some of its juices, about 5 minutes.Return the pork and any collected juices to the pan
- Add the soy sauce mixture, bring to a boil, and cook, stirring occasionally, until the sauce thickens, about 2 minutes.Remove the pan from the heat
- Add the dark green parts of the green onion and avocado
- Serve as is or over coconut rice.
