Ingredients

The following ingredients have 6 Servings
  • 2 pounds pork tenderloin, cut into 2-inch cubes
  • 1 teaspoon sea salt
  • 2 tablespoons extra-virgin olive oil
  • 2/3 cup low-sodium soy sauce or tamari
  • 1/2 cup seasoned rice vinegar
  • 1/4 cup honey (optional)
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon cornstarch
  • 1 red bell pepper, diced
  • 1 small pineapple, cored and diced
  • 6 garlic cloves, minced
  • 1 bunch green onions, thinly sliced
  • 1 large avocado, diced
  • Coconut rice, for serving (optional)

Instruction

  • Season the pork all over with the salt
  • Heat the oil in a large skillet over high heat
  • Once the oil is glistening, working in batches, add the pork and cook, stirring, until golden brown, 5 to 7 minutes
  • Transfer to a plate.Meanwhile, in a small bowl, combine the soy sauce, rice vinegar, honey, if desired, ginger, and cornstarch
  • Whisk to mix well
  • Add the bell pepper, pineapple, garlic, and the white and light green parts of the green onions to the skillet
  • Cook, stirring, until the pineapple begins to soften and release some of its juices, about 5 minutes.Return the pork and any collected juices to the pan
  • Add the soy sauce mixture, bring to a boil, and cook, stirring occasionally, until the sauce thickens, about 2 minutes.Remove the pan from the heat
  • Add the dark green parts of the green onion and avocado
  • Serve as is or over coconut rice.
