Ingredients
The following ingredients have 4 Servings
- 24 ozs Spinach (washed and stalks discarded)
- 3 Tbsps olive oil
- 5 scallions (finely chopped)
- 0.25 tsp grated Nutmeg
- 2 cups soft Goat cheese (crumbled)
- salt
- peppers
- 16 ozs phyllo pastry
- 0.25 cup butter (melted)
Instruction
- Put the spinach in a large pan. Cover and cook until wilted then drain, squeezing out as much liquid as possible. Finely chop the leaves and set aside.
- Heat the oil in a pan and gently cook the spring onions until soft. Stir in the spinach, nutmeg and goats cheese and cook for 2 minutes. Drain off any liquid, season with salt and pepper and set aside.
- Heat the oven to 180°C (160°C fan) 375°F gas 5. Grease a baking tray.
- Cut the pastry into 15 6 x 6 cm| 2 1/2 " rectangles and brush with melted butter. Put a small spoonful of the mixture on the end of each rectangle and fold 3 times to make a triangular parcel.
- Place the parcels on the baking tray, brush with more melted butter and bake for 10-15 minutes, until golden brown. Serve hot or cold.
