Ingredients

The following ingredients have 2 Servings
  • 15 oz. Baby Yellow Potatoes
  • 1 cup basil
  • 1/4 tsp garlic, minced
  • 1 1/2 Tbsp Pecorino romano cheese
  • 2 Tbsp olive oil
  • 1/8 tsp salt
  • 2 Tbsp walnuts
  • 3 Tbsp milk
  • 2 Tbsp butter
  • salt and pepper

Instruction

  • Heat a pot with water and bring to a boil. When water is boiling add the potatoes and cook until tender then drain. In a food processor add the basil, garlic, cheese, olive oil, salt and walnuts. Chop and stir the mixture until everything is well chopped. Mash up the potatoes and add the milk and butter. Stir in the walnut pesto mixture and then season generously with salt and pepper. Sprinkle the top with cheese before serving.
