Ingredients

The following ingredients have 5 Servings
  • 4 ears corn (about 3 cups)
  • 1/2 cup red onion, diced
  • 1/2 cup red pepper, diced
  • 1/2 cup fresh mozzarella, diced
  • 1/4 cup pesto
  • salt and pepper to taste

Instruction

  • Cook corn as desired. Let cool and cut off the cob.
  • Mix all ingredients in a bowl.
  • Cover and chill for at least 30 minutes before serving.
