Ingredients

The following ingredients have 4 Servings
  • 2 cups chicken (cooked and cubed)
  • 1/2 cup basil pesto
  • 1/2 cup mayonnaise
  • 1/3 cup celery (chopped (about 2 ribs))
  • salt and pepper (to taste)
  • 2 cups basil leaves
  • 2 teaspoons garlic (minced)
  • 1/4 cup olive oil
  • 3 tablespoons pecans (toasted and cooled)
  • tomato slices
  • avocado slices
  • cucumber slices
  • cheese (for non-paleo)

Instruction

  • Prepare homemade pesto by combining all the basil pest ingredients in a food processor or blender until smooth.
  • Add chicken, pesto, mayonnaise, celery, salt, and pepper to medium bowl and stir until well combined.
  • To make a sandwich, place scoop of chicken salad on a lettuce or cabbage leaf and add any optional ingredients. Roll up and enjoy!
