Ingredients
The following ingredients have 4 Servings
- 2 cups chicken (cooked and cubed)
- 1/2 cup basil pesto
- 1/2 cup mayonnaise
- 1/3 cup celery (chopped (about 2 ribs))
- salt and pepper (to taste)
- 2 cups basil leaves
- 2 teaspoons garlic (minced)
- 1/4 cup olive oil
- 3 tablespoons pecans (toasted and cooled)
- tomato slices
- avocado slices
- cucumber slices
- cheese (for non-paleo)
Instruction
- Prepare homemade pesto by combining all the basil pest ingredients in a food processor or blender until smooth.
- Add chicken, pesto, mayonnaise, celery, salt, and pepper to medium bowl and stir until well combined.
- To make a sandwich, place scoop of chicken salad on a lettuce or cabbage leaf and add any optional ingredients. Roll up and enjoy!
