Ingredients
The following ingredients have 5 Servings
- 500 g pasta
- 2 brown onion medium thinly sliced
- 3 tsp crushed garlic
- 1 tbs oil
- 250 g baby spinach washed
- 3 chorizo sausage thinly sliced
- 1 cup pesto sauce
- 1 tbs parmesan grated *to taste
Instruction
- Cook pasta in boiling, salted water.
- Brown the onions and chorizo in oil with garlic until the onion is well-cooked and the chorizo is brown and almost crispy.
- Drain pasta and, whilst still hot, mix in the onion and chorizo mixture, spinach and pesto. Mix well until the spinach leaves are wilted and the pesto is evenly distributed.
- Stir in grated Parmesan.
- Serve warm.
