Ingredients

The following ingredients have 5 Servings
  • 500 g pasta
  • 2 brown onion medium thinly sliced
  • 3 tsp crushed garlic
  • 1 tbs oil
  • 250 g baby spinach washed
  • 3 chorizo sausage thinly sliced
  • 1 cup pesto sauce
  • 1 tbs parmesan grated *to taste

Instruction

  • Cook pasta in boiling, salted water.
  • Brown the onions and chorizo in oil with garlic until the onion is well-cooked and the chorizo is brown and almost crispy.
  • Drain pasta and, whilst still hot, mix in the onion and chorizo mixture, spinach and pesto. Mix well until the spinach leaves are wilted and the pesto is evenly distributed.
  • Stir in grated Parmesan.
  • Serve warm.
