- 1 cup coconut sugar (or sub with granulated or brown sugar)
- 1 tablespoon orange zest
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon

- 1/2 cup old fashioned rolled oats
- 1/2 cup dried cranberries
- 1/2 cup pecan pieces (or sub with walnuts)
