  • 1 stick unsalted butter (softened)
  • 1 cup coconut sugar (or sub with granulated or brown sugar)
  • 1 tablespoon orange zest
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup old fashioned rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup pecan pieces (or sub with walnuts)
