Ingredients

The following ingredients have 4 Servings
  • 1/4 cup margarine
  • 1 cup Splenda sugar blend
  • 1 1/2 cup pure pumpkin
  • 1/3 cup plain Greek yogurt
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cup all-purpose flour
  • 1 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instruction

  • Preheat oven to 350 degrees F. Coat a 9- x 5-inch loaf pan with cooking spray.
  • In a large bowl, beat margarine and sugar blend until fluffy. Add pumpkin, yogurt, eggs, and vanilla; mix well. Add flour, cinnamon, baking soda, and salt; mix until well combined. Pour batter into loaf pan.
  • Bake 60 to 65 minutes, or until toothpick inserted in center comes out clean. Let cool 10 minutes, then remove to a wire rack to cool completely.
