Ingredients

The following ingredients have 8 Servings
  • 1.5 kg rolled shoulder of pork (3½lb)
  • 2 tbsp dark brown muscovado sugar
  • 1 tsp cayenne pepper
  • 1 tsp chilli powder
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 2 plump cloves of garlic (crushed)
  • 2 tbsp salt
  • 2 tbsp dark brown muscovado sugar
  • 1 litre water (1¾pt)
  • 1 tbsp of the rub
  • 125 g dark brown muscovado sugar (4oz)
  • 300 g tomato ketchup (10½oz)
  • 300 ml apple juice (½pt)
  • 4 tbsp Worcestershire sauce
  • 4 tbsp balsamic vinegar
  • 4 tbsp whole grain mustard
  • 2 tsp smoked paprika
  • few generous dashes of tabasco sauce

Instruction

  • Rinse the pork shoulder and place in a large non metallic container or a large strong polythene bag.
