Ingredients
The following ingredients have 8 Servings
- 1.5 kg rolled shoulder of pork (3½lb)
- 2 tbsp dark brown muscovado sugar
- 1 tsp cayenne pepper
- 1 tsp chilli powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp oregano
- 1 tsp smoked paprika
- 1 tsp salt
- 2 plump cloves of garlic (crushed)
- 2 tbsp salt
- 2 tbsp dark brown muscovado sugar
- 1 litre water (1¾pt)
- 1 tbsp of the rub
- 125 g dark brown muscovado sugar (4oz)
- 300 g tomato ketchup (10½oz)
- 300 ml apple juice (½pt)
- 4 tbsp Worcestershire sauce
- 4 tbsp balsamic vinegar
- 4 tbsp whole grain mustard
- 2 tsp smoked paprika
- few generous dashes of tabasco sauce
Instruction
- Rinse the pork shoulder and place in a large non metallic container or a large strong polythene bag.
